'Irish (Old Fashioned) Potato Candy with Wowbutter!'

'Ingredients:   1 small potato, peeled and chopped 1 (32 oz.) bag of confectioners sugar 1/2-1 cup Wowbutter (crunchy or creamy) 1/2 tsp vanilla extract green food coloring, optional  1.  Place the potato pieces in a saucepan with enough water to cover them and bring to a boil. 2.  Reduce heat to medium low and cook potato until very tender, about 15 minutes. 3.  Drain the water and allow the potato to steam dry a minute or two. 4.  Transfer the potato to a large bowl and mash with a fork until smooth. 5.  Gradually stir in confectioners sugar a little at a time.  (It will be very runny at first.) 6.  Add the vanilla extract while it is still runny and stir well. 7.  Add the green food coloring while it is still runny and mix until the desired color is reached. 8.  When you have a stiff dough, place it on a large piece of wax or parchment paper lined with more confectioners sugar.   9.  Add more confectioners sugar to the top of the dough so you can roll it out. 10.  Using a rolling pin, thin the dough out as best you can to a square shape about 12 inches long and wide. 11.  Spread the Wowbutter over top of the dough. 12.  Pick up one edge of the paper and use it to help roll into a log. 13.  Wrap the log tightly with the paper, cut in half, and place in a big zip lock bag. 14.  Put the bag in the refrigerator for one hour or longer if you need to until it firms up. 15.  Unwrap the log and slice candy into cross sections.  Enjoy!!!  (These are very sweet!  The longer they sit the better they taste!  In 3 days they taste the best!)'
