'Featured Recipe: Old Fashion Vinegar Pie'

RECIPE  Makes one 8 or 9-inch pie (If using a larger pie pan, you may want to double the recipe)   Prep-time: 30-35 minutes Total time: 3 hours  1 cup water 1 cup sugar 3 tablespoons all-purpose flour 2 tablespoons salted butter 3 tablespoons apple cider vinegar 4 egg yolks, beaten  1 tablespoon cornstarch 1/2 teaspoon nutmeg 1/4 teaspoon fine salt 1 pre-baked pie crust   Heat the water and butter in a medium sauce pan over low-to-medium heat.   Once the butter  has melted, add vinegar, sugar, salt, nutmeg, flour, and cornstarch. Be sure to add flour and cornstarch slowly, stirring constantly to avoid clumping.    Once mixture is smooth and has slightly thickened, pour into a separate mixing bowl and slowly combine with beaten egg yolks, stirring constantly.    Return custard mixture to medium saucepan and cook over low heat, stirring frequently, for  about 20 minutes, or until custard has thickened considerably.    Transfer custard to a room-temperature mixing bowl. Cool rapidly.   Preheat oven to 400 degrees.     Fill a pre-baked pie shell with custard mix and smooth out evenly with a rubber spatula. Bake  for 25 minutes or until pie custard starts to brown on top.  Let cool before cutting.   Serve with whipped cream, if desired. This recipe easily fills a shallow pie pan. If using a tall pie pan, or a pan 10 inches or larger, you may want to double the recipe.  CRACKER CRUMB CRUST  1 1/4 cup cracker crumbs 3 tablespoons melted butter 3 tablespoons sugar 1/4 teaspoon fine salt 1 egg white  In a food processor combine first four ingredients. Then blend in egg white.  Press into pie pan.  Bake at 375 for 8-10 minutes. Cool before filling.'
